Yummy-Yummy Bars!!

At my day job, I’ve met some wonderful, wonderful people.  To break things up during the day, we occasionally make little bets with each other.  Nothing serious, just a little fun.  Commonly, the loser has to bring treats.  A few months ago, I won my first little bet (a big celebration for me as I tend to commonly be on the losing end).  When my friend Sara gave me the option of cookies or monster cookie bars, I picked monster cookie bars and I’m sure glad that I did.  They were soooooo good!

Bars

M&M Oatmeal Bars

2 cups quick oats
1 1/2 cups flour
1 cup chopped peanuts (optional – I don’t add these)
1 cup firmly packed brown sugar
1 tsp soda
3/4 tsp salt
1 cup butter – melted
1 can (14 oz) sweetened condensed milk
1/3 cup peanut butter (creamy)
1 cup M&Ms
1 cup chocolate chips

Combine oats, flour, brown sugar, soda & salt. Add melted butter and mix until becomes coarse crumbs. Set aside about 1 1/2 cups of crumbs. Spread remaining mixture in 9×13 pan and bake at 375 for about 8 minutes. Cool.
Combine sweetened condensed milk and peanut butter in small saucepan. Warm and mix until smooth. Drizzle carefully over crust. Sprinkle M&Ms, chocolate chips, peanuts & remainder of crumb mixture over top.
Bake an additional 20-24 minutes or until golden brown.

I really knew they were a winner when I made a batch and brought a few home to share.  I took one out to Karl who was cleaning the chicken house and after the first bite, his eyes lit up and he definitely approved.  When Dad stopped in the house for a minute I gave him one too.  Dad’s common reaction to things is “Cool.”  So when he said “MMMM…You can definitely bring those home again,” I knew I had a winner.

With the family coming home this weekend, I may have to make another pan.  However another co-worker of mine gave me a recipe for a concoction of brownies, vanilla pudding, cool whip, peanut butter, and recees peanut butter cups.  I may have to make both.  Stay tuned–I may have another recipe for next week….If I get a response better than “Cool.”

  1. those look WONDERFUL!! just hope i can find the recipe when i take a break from counting weight watcher points! cowboy cookies and monster cookies are my favorites!…….i love cookies!

  2. Kelli, these sound real tasty. Please do share the brownie recipe soon as I have been craving peanut butter cups and would love to try your recipe. No better combination that quilting and chocolate. Thanks
