What Kelli is Making: Taco Pasta Salad

Kelli had a family get-together not too long ago and had to make a dish to share. Kelli and I both love salads but don’t make them that often at home because we end up being the only people who are eating them. The problem is that so many salads get mushy or don’t last more than one day. So Kelli was excited to make a new salad for the get-together so she could have some and not waste it.

The salad she made was Taco Pasta Salad…I have to admit, I was a bit jealous. The event was on Kelli’s husband’s side of the family so I didn’t get to taste it.

Kelli did the prep in advance. Everything got chopped…

The meat was prepped.

Everything was mixed together except the chips and the French dressing.

She did that right before they were ready to eat. It worked out perfectly. Everything was crisp and yummy.

Kelli says she will definitely be making it again. Dare I hope that the next time she makes it she makes it for our side of the family?? HA.

I might just need to make it myself. Hmm. I could half the batch and then only mix up a small portion when I wanted to eat it. Hey, that just might work. That way it would keep in the refrigerator AND it would get all mushy. I’m off. I’m going to put the spiral noodles on my grocery list. I can’t wait to give it a try.

  1. That salad is good! I made for my family when they were visiting this summer. I didn’t look closely at the recipe you attached but for my family we wouldn’t use so much pasta. I also had to serve tomatoes separately since the one who requested this dish doesn’t eat fresh tomatoes. Very good though.

  2. Had this salad last weekend sans meat. There are rarely any leftovers so we have begun plannedovers for meals like this. Your quilt certainly deserves first place. I am trying to plan how your borders can help me with a panel I need to make larger. Thank you.

  3. I have been making this salad for years without pasta, and add shredded lettuce, it is soo good,will have to try it with pasta.

  4. I wouldn’t add the shredded cheese until serving time, it too gets soggy. It does sound delicious dish. I think all my kids would like.
