I would love to show you the quilt I am working on…but alas, I can’t…it’s a surprise.
Instead I will show you what we’re doing today.
We are making some whole tomatoes….some salsa and some rotel type tomatoes. Â The girls are here to help….
Here’s Kayla…she’s in charge of removing the skins.
Kelli is manning the food processor chopping peppers and onions….
It was Kelli’s first time at it.  The silly girl didn’t know that you should NEVER touch your eyes after chopping jalapenos and onions.
And well Puppycat (Kelli’s beagle)…as usual she’s in charge of the entertainment. Â If you’re looking for a recipe to make rotel tomatoes, here goes…
1gallon chopped tomatoes with skins removed
2 large green bell peppers chopped
1 large onion diced
8 hot peppers chopped
1/4 cup sugar
3/4 cup vinegar
1 Â 1/2 T salt
Mix all ingredients. Put in hot sterilized jars. Add 1 tsp of lemon juice to the top of each jar. Seal and process in a hot water bath for 15 minutes.
Tomorrow is the day to come back and check out the Crumb a Long…I am so excited.

Yum! We keep rotel tomatoes in stock here, but i never thought to make my own…duh! I’ll be pinning this recipe.
I hope she found out BEFORE she touched her eyes! I’ve messed up once and splashed a few drops of clean water (after washing my hands and the knife) up into my face. It’s incredible how much pain thenre was just from water that’d touched the utensils that had touched the serrano peppers.

Hi Jo. Those rotel tomatoes sound good. I’ve never heard of them before but I’ll keep the recipe in case I get some time. Hi Jo! Thanks so much for the Rotel recipe, but I’m more interested in how you can whole tomatoes. ?? I cook my tomatoes and can them for use in chili, but there are never any chunks left after cooking them. Could you please share how you can whole tomatoes? Thanks! And give Gracie a big smooch for me! Love that dog!!!

Thanks for sharing this! I love your Black Bean and Corn salsa recipe! In these Rotel type tomatoes, do you use fresh lemon juice or that fake icky kind that comes in the little plastic lemon thing?
