What I’m Making: Sausage, Potato, Kale Soup

I have been trying to make a big effort to use what I have in the pantry and freezer, but more than that, I’ve been trying to stay on top of my fresh produce. What a challenge!

I was scrolling through Facebook and came upon a soup recipe that needed spinach. I had a half bag of spinach that needed to be used so I decided I would make the soup. HERE is a link to the recipe.

The broth is incredibly rich with a nice spicy kick from the sausage, making it the ultimate comfort food bowl. Every spoonful is full of tender potatoes and savory greens.

* 1 lb mild Italian sausage

* 1 small yellow onion, chopped

* 3 tbsp minced garlic

* 1/4 cup cooked bacon pieces

* 4 large russet potatoes, sliced thin

* 4 cups water

* 2 chicken bouillon cubes

* 2 cups chopped kale leaves (I used Spinach)

* 1 cup heavy whipping cream

* 1 tsp Cajun seasoning (I used less)

* 1/2 tsp onion powder

* 1/2 tsp garlic powder

* 1/2 tsp red pepper flakes (I skipped)

* 1/2 tsp black pepper

Cook the sausage, onions, garlic, and bacon together in a large soup pot until the meat is browned.

Keep the flavorful grease in the pan and stir in all your dried spices.

Pour in the water and bouillon, then toss in the sliced potatoes.

Simmer everything until the potatoes are tender when poked with a fork.

Mix in the kale leaves and let them wilt down into the broth.

Pour the heavy cream in last to make it rich and ready to eat.

Slicing the potatoes to an even thickness helps them cook at the same rate without turning into mush,

Here is me making it…

I washed and sliced the potatoes, leaving the skins on.

I used Slad Ya Mama but only about half the amount called for. Some people at my house don’t like spice.

I thought I had cream, but opened the fridge to find none. I did have whole milk, though, and used it.

It was 100% good. You have to like the flavors…happily I love these flavors.

It made a nice amount of leftovers, so I was able to have lunch for several days. That’s perfect in my book!!

  3. I was about to say Olive Garden but Kate beat me to it. It looks delicious. I’ve never heard of Slap Your Mama before! LOL! Thank you for the recipe – Will save it.
