What I’m Making: Raspberry Almond Scones

The other day, Rick mentioned that he likes scones. Well, that is easy enough. I went to the blog to find my recipe. I’ve made different kinds of scones in the past, but couldn’t remember what I made. I have recipes for Cheddar Dill Scones. You can find the recipe HERE. Rick isn’t a pickle fan so I figured anything with Dill was out.

I have a recipe for Turtle Scones. These are delicious. You can find the recipe HERE. Shucks. I didn’t have any caramels. Hmm.

I have a recipe for Caramel Apple Scones with is to die for. You can find the recipe HERE…I didn’t have caramel and didn’t have apples. Shucks.

Well, time for a new recipe. I ended up finding THIS recipe for Raspberry Almond Scones. That sounded wonderful, and I had raspberries leftover in the freezer from last year and needed to be used up. I knew Rick liked raspberries but didn’t know about almond flavoring. I decided to take the risk.

Scones are actually really easy to make. The trick is to grate your butter.

I added in the rest of the ingredients following the recipe, and my mix looked like this…

I put it out on my baking mat. You can buy them HERE. I LOVE my baking mat!! Just be careful not to use a knife on it. I use a pastry cutter. You can find it HERE.

I forgot to take a picture of me shaping it into a circle. After you do that, cut it with a pastry scraper and place the wedges on the pan like this.

They need a 400 degree oven. Mine came out like this…

Then I made the almond glaze to go over them. YUM!!

Rick loved these…I loved these…the few lucky people at Rick’s job loved them.

If you have raspberry plants, or if you like raspberries. This is definitely a keeper recipe.

  1. Now you made me hungry for scones. My problem – my oven doesn’t work and it’s hard to find them at the grocery store – at least the one I go to.

  2. I am sure those are very tasty – raspberry and almond – oh my!!! I will definitely try making these. I usually make some blueberry lemon (yogurt) that we like, but I’m sure we will like these. Jo it seems like to me you are having so much fun making many special food items that Rick likes – as you used to do for Kramer. It’s great hearing about them.

  3. I’ve tried to make scones before – talk about your epic failures! LOL!
They sound really good though so I’ll have to give it another shot. Maybe even buy a baking mat and pastry cutter ;-)
    Love and prayers

  4. I have never made sconces, but this sounds easy enough and I have raspberries, blueberries and strawberries in my freezer. I also own a pastry mat and cutter so today will be the day to try my hand at grating butter. Who knew? Thanks for sharing

  5. We have an easy scone recipe in Australia flour lemonade and cream you can add any flavourings look it up its called lemonade scones so very easy

  6. I have just spent over an hour trying to find this recipe again. I didn’t save it when I first saw it ( like a dummy!) Is there an index or way to find your recipes faster than going through all the posts?

    1. There is a search bar in the right hand column. You don’t have to know the exact name. You could just type in raspberries.
