What I’m Making: Make Ahead Breakfast Bowls

I am a big fan of the cooking website Iowa Girl Eats…not only because she’s an Iowa Girl like me but also because her recipes are WONDERFUL.  Her recipes are gluten-free but you wouldn’t know it because they are tasty and so delicious.  I am not a gluten-free eater all the time but have learned that when you have diabetes, many gluten-free recipes are also diabetic friendly…this one isn’t quite as much as it has potatoes but, I offset with fewer potatoes and more meat.

Anyway…eat however is right for you…I’m no dietician.  All I really know was that was good and very helpful by keeping me out of the kitchen and cooking all day.

Here is mine all finished.  It was good!!

You follow the recipe to brown potatoes in the oven…

You brown sausage…


You scramble eggs…

Then you put them all together into containers along with cheese and other ingredients and the containers go in the refrigerator.  I have THESE Pyrex containers that worked GREAT!


I made one and ate it right away.  I put four other containers in the refrigerator.  Those were consumed over the next couple of days.  My daughter Kelli’s kids were here one day and warmed one for them.  They ate it great.  I sent one with Karl one day too.  Over all, I can see that these would be extra handy for anyone taking their lunch to work or wanting something quick to warm up.  I would have loved to have this recipe when my husband was living.  I just know I would have made it often as he only ever took a short lunch break and I was always scrambling to have something ready for him.

We are a family that likes breakfast any time of the day so these were quick and easy.

  1. YUM LOOKS GOOD—WILL HAVE TO TRY WHEN I GET HOME TO IOWA!!!
    THAT IS IF THE STORMS EVER ALLOW A 3 DAY SPAN -SNOW/RAIN/WHATEVER FREE!!!

  2. Make something like this. I add cheese and salsa. Wrap it in a flour tortillas. You can eat now, on the go, or make some ahead and freeze them. Very convenient. Kids love them ’cause their hand food that don’t make a mess. We call them breakfast burritos.

    Try the South Beach breakfast quiches. Make them in muffin tin lined with aluminum foil liners. You can put meat in them too and they freeze well.
