What I’m Making: Italian Tomato Cucumber Salad

You know how life goes…you become single, and you eat better. HA!! It’s been that way in my life, anyway. I’m not trying to lose weight, but I am trying to add more veggies and fruit to my diet. I’m staying a little further away from sugar, too. That’s smart with my diabetes and cancer diagnosis. So let’s just say, I’m eating smarter.

This is one of my new go-tos. This is so simple…there is no recipe.

These are the things I grab…Cherry Tomatoes, Baby Cucumbers, and Italian dressing.

I cut up the tomatoes and cucumbers…I typically make two cucumbers’ worth. I don’t chop up a whole bag just for me.

Then I pour just a little bit of Italian dressing over the top.

Stir it up and that’s it. Sometimes I add a sprinkle of Parmesan Cheese. Sometimes I add fresh mozzarella pearls. Some people might prefer a little extra salt.

It is simple, easy, and tasty too. I really love serving it with fish for a nice light meal…I like it with a sandwich. It’s a nice little refreshing extra.

Best of all…I can make this one day, and it’s still good the next day.

I do have to warn you. I don’t have the best luck with the cucumbers lasting in the refrigerator for a long time. I try to use up the cucumbers within 5-7 days as they don’t last the best in the refrigerator.

I love it…it’s quick and easy and just perfect.

  1. This sounds like a perfect salad. I plan to try it. We eat a lot of salads – we always have just tossed which we then add things to as the mood dictates.

  2. Try adding raw cauliflower and black olives to your salad. We’ve made this salad for years. So simple and so good.

  3. Love how simple this salad is to make and adding some cheese or black olives to it would be perfect for me. Thanks for sharing.

  4. The salad looks great. A must try for me.
With cancer (as I personally know) you have inflammation, so eat all the plant food you can.
    It helps with the inflammation.
Try this dressing–1 TBSP of honey, 1 TBSP. balsamic vinegar and 1 TBSP. of Dijon mustard.
Helps in not using a lot of oil on salad.
Great for people with IBS, as I know.
    Take care of yourself.
    Happy Mothers Day to everyone.

  5. Hi, Jo! I’ve started keeping my fresh fruits and veggies vacuum sealed in a Mason jar in the refrigerator. They stay fresh so much longer. Every time I open the jar to take some out, I vac seal it again. I’ve got some romaine lettuce that’s been in glass jars for almost two weeks, and it hasn’t even started turning brown yet.

  6. We often had this on the table growing up, especially with tomatoes and cucumbers fresh from our garden, using simple vinegar and oil, salt and pepper dressing. Now, I add fresh sliced white button or cremini mushrooms. Yum.

Hi Jo, I think of you often and pray that you’re holding your own in this battle with CA. We just went through our daughter having bilateral mastectomies. She actually found a bump (her dr. couldn’t palpate it) and she insisted on further testing…thankfully her lymph nodes were clean. She’s my firstborn daughter and life hasn’t always been fair for her. I spent many tears, prayers and days in clinic/hosp. with her. She will take a pill each day for 5 yrs and follow-up diagnostics to make sure it’s gone. I have battled bladder CA for 12 yrs & stay ahead of it by having cystoscopies with tumors removed from my bladder. CA is terrible but we have to be our own best advocates!! We all love you dearly Jo and treasure the time we all have together…

I almost forgot the salad that everyone has commented on! We belong to a wonderful RV group of friends and go out to campgrounds, parks etc. and spent a lot of time cooking, eating, playing games, eating……….
My favorite salad is the cucumber, cherry tomato, thinly sliced red onion with a light dressing or oil with grated parmesan cheese. (I have added black olives, baby corn, artichoke hearts to change it up a bit) I make a HUGE bowl of it and never bring any home with me!! Very healthy, filling and colorful! You’re looking very lovely and healthy Jo! Take care of yourself, keep busy and give your BF a hug. So glad you have him in your life…
