A couple of weeks ago my great niece was having her bridal shower. Several months earlier I had offered to help or make some food. That’s just my role in the family and I love that role. It’s never putting me out to bring food. I love being a part of things if I can.
As the time grew closer, I was contacted and told if I wanted to, I could bring some muffins…if I didn’t want to or was busy, that was totally fine too. I said, “No. I’d bring muffins.”
Well, the baker in me really wanted to bring the cream cheese raspberry rolls I had been making but making them might be difficult as the shower was two hours away, and making them before the 10 am shower time would be hard. Besides…if they requested muffins, I should make muffins.
Kalissa and I were in town so I planned to pick up blueberries. At the local grocery store, there were no fresh blueberries and there there were no frozen blueberries. UGH. They did have a pack of frozen mixed fruit so I grabbed that and made plans to make my blueberry muffins only make them with mixed fruit instead.
The problem is, which other cupcake should I make…Hmm. Then I decided on Pumpkin Chocolate Chip. I originally thought nope…not pumpkin for a spring bridal shower but the muffins are really good.
Georgia, my granddaughter, was at my house and I was bopping around making muffins. The mixed berry ones were made and turned out just like they always do.
Then I made the pumpkin ones. I had a different brand of pumpkin. It was a little runnier than my usual brand. I didn’t think anything of it….but when the muffins came out, they were TERRIBLE. AH!!. They were nothing I could bring to a bridal shower.
So what’s a girl to do?? Open a recipe book and try something I’ve never made before. HA~
I ended up finding a recipe for Cranberry Cream Cheese Muffins…so I made them. The dough ended up being really thick.

I put them in the silicone muffin cups that I have. I wasn’t sure about that because…
I would have to remove them from the cups and not break them before I could deliver them.

It ended up working just fine.

The muffins were AWESOME and I highly recommend them. I didn’t add the pecans. If I am taking food to an event I never add nuts as I don’t know if anyone has an allergy.


When I made them again, I think I would half the frosting recipe. I had a lot left over.
Georgie gave them a try…she said they were good.

Kalissa and I tried them too. We thought they were AMAZING! Definitely give these a try. I love cranberries but I’m going to try them with other kinds of fruit. In my book, these are top ten muffins!!
One more note. These were still wonderful and moist the next day!!
This sounds just like the recipe I use for chocolate chip muffins. I got it years ago from taste of home website I think and changed it around a bit leaving out the nuts, adding chocolate chips and no drizzle. It’s been our go to for years and now my 16 year old daughter makes them for us. They are super yummy. I’ll have to try the original recipe and maybe replace the cranberries with blueberries which will go over better in my house. :)

I just down after breakfast to read your post so I’m not hungry, but by the time I got finished my mouth was watering wondering how soon I could make some. YUMMMMM!!!!?
These sound wonderful!! I will have to try them also. We have a potluck the first Friday of every month…this might be what I will bring in June! I wonder if dried cranberries will work or will do the blueberries. Thanks!!
