I love little serendipity moments in my life. A few weeks ago, I was scrolling on Facebook, and a Brooke Ervin recipe popped up. It was for Chicken Fried Chicken. I put the recipe in my brain’s filing system and made it a point to get some chicken breasts so I could make it.
My brain’s filing system isn’t the best…not bad, but not the best. I didn’t get chicken breasts on my grocery list.
Then we were moving Rick to my house, and Rick had chicken breasts in his freezer. I left them out and used them to try the recipe. Oh my. SO GOOD!! You can find the recipe HERE.

I followed the recipe, pounding the meat, making the breading, and mixing the milk mixture to drag them in.
I had never made chicken breast like this before, but you can bet I will be making them like this again. Rick commented that he could eat them just like this, only in a sandwich. I quickly agreed.
I make pork tenderloins, though, and that’s very similar.
I had made extra mashed potatoes on a different day and had them set aside.

Then I made a gravy to go over it all.

We layered it all like this…

Seriously…it was so good. It could have used a side salad or some green beans, but Rick isn’t a big side eater. I won’t bother making it just for me. Rick is a person who loves meat, potatoes, and gravy. Recipes like that can get boring after a while. It was nice throwing the chicken for a twist.
This recipe is a winner!! Give it a try!!

I recently started soaking chicken in a bowl of milk overnight in the refrigerator. I just drain the chicken in a colander the next day and get on with whatever recipe I’m using. The milk acts as a tenderizer. Haven’t been disappointed in the results!
great idea!!
The recipe wasn’t there when I clicked on the “Here”.
I couldn’t find the recipe either.
Jo, you can use cube steak in place of the chicken in this recipe, like they do at Cracker Barrel. It’s one of my husband’s favorite meals! (It’s great with venison cube steaks since you probably have that since Rick is a hunter.)
That looks good. It seems like one has to be on facebook to access the recipe.
Dh loves chicken fried steak – I’ll have to give this a try. And thanks to Susan for the idea of soaking the chicken in milk over night.
Love and prayers
I waited a moment for the “reel” to start, and I’m not on Facebook, but! she came right on and demonstrated how she cooked it and I just wrote down what she said. So the link does work, and it sounds delicious!!
There was no sound and I couldn’t find a way to hear anything.
When I got to the Facebook page, I had to click towards the top left, where it said, “click to unmute” and the sound played. Hope that is helpful.
