What I’m Making: Chicken Cauliflower Steaks

As a single person…I don’t cook very well for myself. It’s so easy to grab a sandwich and not bother with cooking. Sadly, I do that way too often. The other thing I’ll do is make a big batch of something and just eat that for three days…I’m so lazy when it comes to cooking for myself.

As I was scrolling Instagram the other day the site Hungry Happens came up. Oh my. The food was looking interesting and all of it seemed to be healthier. I decided to give one of the recipes a try…One Pan Chichen Parmesan Cauliflower Steaks. They looked good, easy and I like cauliflower.

I cut the cauliflower as directed and put olive oil on it.

Some spices went on top.

Then I layered marinara sauce, chicken, marinara sauce, spice, and cheese on top.

I baked it for 30 minutes and I had supper. It was low mess so I loved that. I ate it with some cottage cheese. I love to group anything with tomato sauce with cottage cheese.

This is my new favorite cottage cheese. YUM!!

The chicken dish was good. I’ll make it again. I might spice it a little more next time. I also loved that it made enough for a couple more meals. It warmed up wonderfully in the microwave and was easy to take to work and warm up.

  2. It looks really good. I’m guessing the chicken was precooked and the 30 minutes was to cook the cauliflower and melt the cheese?

    1. Interesting cottage cheese have never seen it in the local stores. Is it a Walmart thing or some other store in the area I live close so not a problem to go to a local store.

  3. Can’t wait to get my hands on some AE cottage cheese. I’ll be in Iowa in July. Close to your area. Lamont, for our family reunion. Cottage cheese, French onion chip dip and chocolate milk. I haven’t tried Mr. E’s but will get one when I am there.

    I also hate to cook for just me! I’ve been following Acre Homestead on YouTube and she makes multiple recipes at the same time and puts them in the freezer. The last one I made was a croissants (12) with a pound of ground sausage made into croissant-shaped patties and fried, a dozen eggs fried in the drippings from the sausage (break the yolks so more of the sandwich has yolk) and cheese with an amazing honey/Dijon mustard spread on both halves of the croissants. Wrapped in plastic wrap and put in a zip bag, popped in the freezer. I take them out the night before and put them in the frig for dinner the next night. The microwave or air fryer warms them up and melts the cheese. I always love leftovers when I cook!

  5. The cauliflower sounds very good. We like cauliflower so I should try this. I recently read a recipe to roast cabbage slices and that sounds good to me. It is hard to cook for one especially after usually cooking for several.
