What I’m Making: Chicken Bacon Ranch Fettucini

I’ve told you before that I cook without recipes all the time.  Experience and a sense of experimentation take me lots of place that recipe books don’t.  Getting my  Instant Pot Pressure Cooker has also encouraged me to try different things.  This is an  Instant Pot Pressure Cooker recipes but I am sure can be modified.

The recipe all started on a childcare day.  I have lots of little ones now and their favorite food is always noodles.  I’m not a big fan of serving mac and cheese all the time.  Once in awhile is okay but not too often.  On this day I came to the conclusion that I’d make something noodle based and the meat I had available was chicken.  So chicken and noodles….noodles and chicken.  What would I make?  The I thought the other thing the kids like is anything ranch flavored…so I decided I come up with something that was chicken, ranch and noodle based.

So in the  Instant Pot Pressure Cooker I put:
4 frozen chicken breasts
1/2 c milk
3/4 of a bottle of Ranch Dressing
6 strips of bacon cut into pieces
4 oz of cream cheese
some garlic powder and onion powder
pepper

I closed the Instant Pot Pressure Cooker.  I hit meat setting and then lowered the time to only 30 minutes.  I wanted the chicken to be able to easily flake apart.  This is how it looked when I put it all in the pot.  Lots of people are hesitant that there isn’t enough liquid to bring it to pressure but the added milk helps with that as does the liquid form of ranch.

When the timer went off I released the pressure and opened the pot.  I took the chicken out and shredded it.

It was a thin liquid but I wanted to thicken it so I mixed three tablespoon of corn starch with a bit of water.  I set the pot on saute and poured the corn starch mixture in.  It only took a bit for it to thicken.  I turned the  Instant Pot Pressure Cooker off.  Then I added the chicken.

While I was doing that I boiled some fettuccini noodles using the stove.

I dished it up and oh my…it is wonderful.  It is definitely not a calorie conscience food by oh my…YUM!!!  I did sprinkle some Parmesan cheese over the top.

The childcare kids LOVED it…I did too.  I will for sure be making this again and again….and again.  YUM!!!

This is how LOTS of my cooking comes about…a few thoughts jumbled together and the next thing I know, I have something tasty to eat.  I can’t tell you how much I love and use my  Instant Pot Pressure Cooker.  It’s great for childcare.  I can set it and it shuts itself off.  I don’t have to worry about where I am or what I’m doing.  I don’t worry if it’s boiling over or burning.  It’s been the very BEST small appliance I’ve ever bought for the kitchen.

  1. I bet you could add Broccoli, but I’m not sure daycare kids would eat that. I made chicken enchiladas with my instant pot! Yummy!!

  3. What size bottle was the Ranch dressing? I have both 8 oz and 16 oz bottles. Sounds sooo good, but don’t know how to judge the amount of Ranch to use. Help! Thx!
