What I’m Making: Cheesy Chicken Bacon Ranch Pasta

When I’m scrolling through Instagram, I often come across recipes I would like to try…so I take a picture of them with my phone, and then later I go back and make some of them. This is one I tried.

I like to make a big hotdish type meal and then I eat it the rest of the week at work. I like something simple and easy to throw into a pyrex bowl, warm up, and eat. At work, lunch is only about 15-20 minutes so it’s nice to have something that requires no prep time besides a few seconds in the microwave. Give me something like this and a banana and I’m good to go. I love quick and easy.

I saw the recipe while I was scrolling but then read the recipe. Hmm. It looked like there was bacon in the dish but bacon wasn’t listed on the ingredient list. Me, I added the bacon. A person just can’t go wrong adding bacon.

While the water was heating up and the noodles boiling…

I fried some bacon in 2 Tablespoons of butter and some garlic.

I shredded a rotisserie chicken.

After the noodles were done I mixed it all….

Then I added…
2 cups milk
2 packets of dry ranch dressing
2 cans cream of chicken
2 cups of cheese

I like it from the beginning but liked it even more the next day…and I liked it even more the next day after I crunched up the last of the pickle-flavored potato chips and sprinkled them over the top!! HA!! It was really good.

I know it’s all a little crazy to crunch up chips and put them over the tops but seriously…so good.

This recipe was originally only half the amounts but I wanted it for leftovers for a few days so made a whole batch. I don’t think I’ll make it again unless I have the pickled-flavored potato chips. Who knew??

You’ll have to let me know if you try it…and if you try it with or without the chips.

  1. It sounds good to me. I don’t eat much pasta so would only make half a recipe. I just think that most any dish that has cheese is yummy. Thanks for sharing!

  2. This recipe is one that my grandsons love. I don’t recall cream of chicken soup though. The ranch was used to coat the chicken and then cooked in frying pan with other ingredients. This recipe I believe would be better with the canned soup!

  3. I will give this recipe a try, definitely with the bacon. I always put crushed potatoe chips on my tuna casserola/hotdish, so I would definitely put crushed chips on this. Wde always put shoestring potatoe sticks on our summer tuna ring noodle salad. I know a lot of people use shell noodles for tuna salad, I grew up with small ring noodles as the pasta ingredient. Has to be the small rings even the large ones just aren’t the same.
