What I’m Making: Caramel Apple Scones

Yesterday I told you that I had gotten a bunch of apples from my friend Carla.  I told you about processing them but I didn’t tell you what I’ve been making with some of the apples that I held back.

I dug through cookbooks looking for a few new recipes to try and hopefully over the next couple of weeks, I’ll share some with you.  Today’s recipe is Caramel Apple Scones.  YUM!!

I didn’t grow up eating scones and frankly didn’t know what they were until I was an adult.  This made me think that they were somehow hard to make.  NOT TRUE.  They are very easy to make.

I did make some changes to the recipe I would note here.

This was a small recipe only making 4 scones.  I doubled the recipe as I knew there would be people here to eat them.

I didn’t have wheat flour on hand so used only white flour.  I didn’t have half and half but did have cream so used cream.

I’ll share a couple of tips and tricks I learned from making scones…I keep frozen butter in the freezer and use only it when making scones.  I use a grater to get the butter into small pieces.

I don’t knead the dough very much.  I don’t use a mixer.  It’s super easy to mix the dough by hand and I believe preferable.

I don’t use a rolling pin to get the dough into a circle.  I just pat it out.

For easy clean-up, I use the blue baking mat you see under the dough.  You can find them HERE.  The mat is super easy to clean and makes cleaning a breeze.  It’s easy to store too.

Here the scones are just before they went into the oven.  Don’t make the mistake of using the 350-degree setting.  Scones need 400 degrees.  If you bake them at 350, they won’t keep their shape as well.

Here they are out of the oven.

After they cooled I drizzled them with caramel sauce.  YUM!!  It’s not just any caramel sauce.  It’s Caramel Sauce from Grazing Goats Dairy.

The Dairy is just a few miles north of my home and I know the owners.  It’s family-run but it’s mostly a father/son team with the help of the rest of the family.  Our kids went to school together so it’s been extra fun to see their business grow.

They have a couple of different flavors of Caramel Sauce.  The Vanilla is my favorite but I didn’t have any of that on hand.  I’ve yet to try the bourbon-flavored sauce.  Soon I hope!

Carver loves it when I cut up apples and give him a little bit of caramel sauce in a bowl for dipping.  You can find the website along with order forms HERE.

  1. I like scones and those look wonderful! No, they aren’t hard to make, just like making biscuits. I definitely want to try this recipe. I heard today that my brother has apples that need to be used, so I’ll grab some. Thanks for sharing.

    Last time, I had a lot of apples, I froze apple crisps. Nice to take them out in the winter and bake with meatloaf or stew. I also made crockpot apple butter; so yummy.

Super well packed, no damage at all and I’m in Nevada…a fair few miles from Iowa!! It’s before noon here and my mailman just dropped off the box! If any of your readers are interested in ordering the caramel from them…yes, it is quality caramel and does have a higher price than Hershey’s caramel, BUT shipping was just $5.00!!! Thanks for the recommendation and I made brownies the other day, so I’ll be having ice cream on my brownie with probably the bourbon caramel!! thank you for the recommendation – I so love supporting family-owned/operated endeavors that produce a good product.
