What I’m Making: Breakfast Skillet

I was scrolling through Facebook and a recipe popped up.  It was a breakfast recipe…it was Sunday and Hubby was home…and I had all the ingredients so I gave it a try.

The recipe was super easy….It was fairly quick too.

Taste…Yummy.  The pictures don’t do it justice at all.

Start with a skillet or pan that can go in the oven.  Preheat to 350.

Layer tator tots on the bottom of the pan.  They are going to be the “crust”.  Put the pan in the over for 15 minutes.

While that’s in the oven scramble some eggs.  I used 7.  Fry up some sausage or bacon.  I had both so did both.

Once the pan in the oven is done, put the scrambled eggs, bacon and sausage on the tator tots.  We added a chopped onion too.  Then put cheese on top.  Pop it back in the oven for 10 minutes.

That’s it.  I can totally see me making this when we have company along with some fruit.  It would make a really nice breakfast that seems fancier but really didn’t take long to make.

Hubby loved it….I loved it…I’ll be making it again.

  1. This sounds yummy and easy. Did you flatten the tator tots? I think you could add any veggies and/or serve with sliced tomatoes. I will try.
