What I’m Making: Breakfast Enchiladas

When the kids were home, I made a batch of Breakfast Enchiladas. They were easy to make, and I could make them ahead of time. PERFECT.

I can’t remember where I saw the reel from. I looked and tried to find it, but couldn’t find it.

I started out with tortillas. I put cooked tator tot coins on the tortilla. I added cheese and bacon pieces.

Then I scrambled eggs and made pork sausage gravy. I put some of each over the top of the tator tot coins.

Then I added a little of the pork sausage gravy to the bottom of the pan and put the rolled up tortilla’s in the pan.

The rest of the gravy and cheese went on next.

I baked it for 25 minutes, until the cheese was melted. I did put it under the broiler for a couple of minutes to give the cheese a little color.

Here it is all ready for a bit. I really liked it. I think the original recipe called for green chilis from the can, but we were feeding picky kids so omitted them.

I prepped this in the morning and then baked it at supper time. That made supper so much easier. All in all, it’s a good recipe.

  1. Those sound good although I probably would pass on the gravy, but not sure what I’d use in place of it. It is always a winner to have a dish that can be made ahead of time.

    1. I wonder whether the dish that exploded was the newer kind of pyrex? Around 1998, they changed from the old borosilicate glass to cheaper tempered soda-lime glass, which can shatter if its temperature changes rapidly. The old, better product is usually labeled “PYREX” in all caps; the cheaper new product is usually “pyrex” in lower case.

  2. Sorry, but these are breakfast burritos — dishes w FLOUR tortillas are burritos. Enchiladas are made w CORN tortillas as are tacos. Happy to share recipes from my MIL that were handed down to my husband, a gourmet cook (who also does all the grocery shopping).   3. I think Mexican crema or sour cream could be used in place of gravy. That would save a prep step. Either would be a traditional ingredient. A great make ahead meal, and the finished product looks delicious.

  4. Looks heavenly! We make breakfast burritos with homemade flour tortillas, scrambled eggs, hashed browns, pinto beans, bacon and cheese. Roll them up and freeze them. When we travel, I put them in my little travel cooker, and we have a cheap meal in our hotel room!

  5. I like the idea of using tater tots in these breakfast burritos, what a great idea. I like making more than we need and having leftovers for a few days and this sounds perfect for that. Thanks for sharing.
