What I’m Making: Banana Bread/Muffins

I was busy doing a little experimenting after I bought some bananas on sale. Can you believe the whole sack was only 99 cents? I ended up buying two and gave one to Kalissa. Her boys love banana bread.

Then I got home and started thinking what I should make. I have a banana bread recipe I use but the bread always gets so dark. I have a whoopi pie recipe but they take so long to make. I have a muffin recipe too.

I decided on banana bread only thought to try a new recipe. I pulled out his cookbook that a blog reader gifted me.

I found this recipe…it was different as it called from heavy cream. I had some in the refrigerator so yes. I would try this recipe.

I doubled it.

I had what I thought was extra batter so added chocolate chips and put them in muffin liners.

Oh, my word. The muffins are top ten. I love them. I love them so much.

They really were awesome. The bread I ended up forgetting to reset the timer…so not so good. I burnt it. Ugh. (just keeping it real here)

So…there are more bananas and I’m going to make more muffins. They were honestly, so good! I’m making this my new go-to banana muffin recipe.

  1. Just remember you can always remove the skins then freeze the bananas. That way you can use when you want.

    The recipe calls for one 9x5x3” pan. By doubling the recipe you should have gotten only two pans of banana bread. How did you get four pans? Did you use much smaller pans? Just wondering .

  3. I always made banana bread but last year I spooned the batter into my deep silicone muffin pans. Oh my!! They were so good I don’t make the bread much at all. I only add lots of walnuts but I think when I make them for the greats I’ll add chocolate chips instead. I’ve used the same recipe for over 45 years and the recipe calls for oil, not butter. Yours look delicious.

    Try Bonnie hunter’s banana bread. Recipe on her blog. Make it all the time. Next time tho, I’m making muffins!
