I was talking on the phone to Kayla the other day and she said she had just tried the easiest recipe ever. Â Well that had me listening. Â Who doesn’t want an easy recipe?
She said she changes it up depending on the mood and time. Â So here goes….She said, “Take a can of beans and one pint of salsa and put that in a pan on the stove and heat it up. Â The poach some eggs into it-done. Â Then we eat in tortillas, over cornbread or on rice.” Â Well she said that she changes it depending on time so I did change it….
I started by frying some sausage. Â While that was frying I chopped an onion and a green pepper and fried them with the sausage. Â I added the pint of salsa and the can of black beans. Â I also had a left over ear of sweetcorn so I cut that corn off the cob and added it too. Â In a short bit I had this…
While my mixture was really hot I made a couple divots in the mixture and cracked eggs into them.
I put the cover on the pan and left it sit while the eggs poached in the mixture. Â Here’s how it looked….
Hubby ate his in a tortilla shell. Â I am always trying to find ways to cut carbs so I ate mine with sour cream and cheese but no tortilla shell.
It was really yummy and oh-so quick. Â I love one skillet meals and this one was a good one.
If you want it spicier add cumin or red pepper flakes when cooking. Â We had a pretty hot salsa so I didn’t add extra spices. Â Kayla likes to make meatless meals so doesn’t add the sausage. Â However you make it, I am sure it will be a hit. Â Hubby really liked it and I know I’ll be making it again..likely several Sundays this year, as typically we have brunch on Sundays and this is the perfect dish for that!
I don’t know if you are familiar with the Budget Bytes blog, but if not, go check it out. I particularly like her Monterey Chicken Skillet and her Creamy Tortellini with Vegetables. (They may not be named that exactly, but close enough for a search.) She recently redesigned her website and I couldn’t find the search function, so I just googled Budget Bytes plus the recipe name. My favorite recipe of hers is the Spinach and Mushroom Crustless Quiche. That one’s good for breakfast, lunch, or dinner!
Most everything is better with a poached egg on it–ramen, fried potatoes, etc. :)
