Weekend Happenings

Buck came home on Friday night. He brought Scotty and Lilly with him. Kalissa, Gannon, and Carver, all came over too.

Anders was sick so Craig stayed home with him. Lucy was wrestling the next day so she wasn’t with either. We had pizza for supper.

It’s my homemade pizza. I typically make it once a weekend when everyone is home. This night I made BBQ Chicken and Breakfast Pizza.

The next day we went to the locker to pick up the processed deer from the boys’ hunting season.

Polashek’s in Protivin, Iowa is great. On Saturday morning, they have samples out. I took the kids inside, and we bought a few meat treats, and they had a couple of samples. Lilly thought it was great. In the pictures above, Lilly just got done singing “I love meat”, while the store owner was loading our van with meat. She was so cute!!

While we were there they had a sale on Corned Beef. They were only $6.50 or so each. I ended up getting two with the plans to make them for supper that night.

In the busyness of it all, I had a blog reader, Helen, stop by. She had stopped last year, and we had a lovely visit then, and this time too. Kudos to her husband for putting up with the two of us. It was a fun visit!!

That night for supper I did make the corned beef and cabbage. YUM. I did it in the Instant Pot. I highly recommend it. I believe it’s the best I’ve ever made. I put a trivet in the bottom of the Instant Pot. Cut up an onion and put it on top. Added 3 cups of water, put the corned beef in with the fatty side up. Added the seasoning pack and minced garlic. That was in the pot on the meat setting for 90 minutes. Then I took that out and covered it with foil. Then added all of the veggies. I did potatoes, carrots, and cabbage. I put them in on manual for five minutes. It was top ten delicious. Everyone raved about it.

Lucy came at supper time on Saturday.

Lucy, Gannon, and I put a puzzle together.

On Sunday, some of the crew went to roller skating rink. Anders tried roller skates for the first time.

Gannon wasn’t interested in skating so stayed home with me.

Kelli and the kids came on Sunday for skating. They ended up staying overnight….but that is another story that I’ll tell in another blog post. Let me just tell you, it required a trip to the ER.
