I am guessing that many of you wondering what to with all those hard boiled eggs you have left over from Easter…here’s a favorite of mine that uses lots of hard boiled eggs, Ham and Pea Salad.
Here’s the recipe…
1 cup peas, fresh, canned or frozen
1 T minced onion
5 hard boiled eggs-chopped
1/2 c chopped celery (optional)
1 1/2 c ham-chopped
1/2 c mayonnaise
salt if you like
Combine all ingredients and gently toss. Serve.
If you are eating fewer carbs like me, this salad fits the bill. Â
