As promised, here’s my new favorite salad recipe…You can easily adjust this to the amount of people you want to serve.
Cut up 2 tomatoes and 1 cucumber. Cut up 1/2 onion. Add 1/4 t pepper and 1/2 c parmessan cheese. Now pour your favorite Italian dressing over the ingredients. Stir and add more dressing so that all the pieces are covered with dressing. You can use regular or fat free dressing.
If you are a low carb eater like me, this fits the guidelines perfectly.
When I taught at a conference in Mason City over the weekend, this salad was served there. I loved it so much that I came home and tinkered with ingredients until this is what I came up with….Yummy!!
