Do you remember my cake mix challenge?? On August 17th of 2013 Hubby challenged me to use up all the cake mixes that I had in the cupboard.
There were 18 there!!
So are you curious on how I did?
I actually did use most of them up and even bought three more. I ended up with two cake mix boxes to move.
I need to find something to do with the lemon cake mix. When I was at the grocery store I had the intention of making these lemon bars that Hubby loves and accidentally bought a lemon cake mix instead of an angle food cake mix. Now I have a lemon cake mix and don’t have a good recipe for it. Any suggestions???

It’s been a long time since I made this…if I had a cherry pie filling here, I’d already have on in the oven. Just seeing the photo makes my my lips smack. It’s yummy.
So all in all, the cake mix challenge went pretty good….Hubby has learned over the years that it’s best not to challenge me to anything because I usually win. I’m a stinker like that!
Here is a lemon cake mix cake…
Lemon Sheet Cake
1 pkg lemon cake mix
4 eggs
1 (15-3/4 ounce) can lemon pie filling
Frosting:
1 3 ounce pkg cream cheese, softened
1/2 c butter, softened
2 cups powdered sugar
1 1/2 tsp vanilla extract
In a large bowl, beat the cake mix and eggs until well blended. Fold in pie filling.
Spread into a greased 15 x 10 baking pan. Bake at 350 degrees for 18-20 minutes or until a toothpick inserted comes out clean. Cool.
In s small bowl, beat the cream cheese, butter, and powdered sugar until smooth. Stir in vanilla. Spread over the cake. Store in refrigerator. Enjoy!
I would make lemon poppy seed bread. Yummy! You could make small loafs and deliver to your neighbors as a welcoming gift to them instead of you receiving from them.

Lemon pound cake in a bundt pan! You’ll have to google for a recipe, though.
Lemon cake mix, 8oz carton regular cool whip, 1 egg. Mix together. It will be thick. Drop a teaspoon full into a bowl of powder sugar and make into a ball. Drop onto cookie sheet. Bake at 350 degrees 8-10minutes. They will not look brown. Awesome cookies!!
I’d just use it to make the lemon bars – they should just taste even more lemon-y.
Lemon glaze cake served refrigerated! One of my own concoctions it had the Sue Rausch stamp of approval lol

I have a great lemon pound cake recipe:
RHONDA’S POUND CAKE
Lemon Supreme cake mix
½ cup sugar
¾ cup vegetable oil
1 cup apricot nectar (or a 5.5 oz can works)*
4 eggs
Beat above ingredients together well.
Bake in tube or bundt pan for about 50 minutes at 350 degrees.
Turn right out of pan and put glaze on hot cake:
1 cup powdered sugar
Lemon juice
*I have made this cake with mango nectar and it was also good.
