It was short notice. Â There wasn’t much in the cupboard but I needed a salad to take to a potluck. Â hmmmm…what to make?? Â I knew the hostess was making scalloped potatoes and ham so I thought a macaroni salad wouldn’t be the best. Â A fruit or a veggie type salad sounded better. Â UGH. Â No veggies. Â I did have fruit though…I really don’t make many fruit salads-then I remembered. Â There was a recipe I made when I was on Weight Watchers years ago…now did I have vanilla pudding…YES!!
This salad is so easy to make and the best thing, I typically have all the ingredients.
Here’s the recipe.
Take a small box in instant vanilla pudding – Â Mix it up using 1 3/4 cups milk. You can use skim milk and sugar free pudding or you can use full strength-whatever your preference.
Once it sets up a bit add a large drained can of fruit cocktail mix, and whatever other fruit you have. Â I happened to have some blueberries, two red apples and a banana. Â Stir it up and you’re done. Â How easy-right?!?!
The salad is tasty and oh so easy-the only problem is that it typically is only good for a 24 hour period. Â I’m thinking next time I make this, it will be strawberry season and I can add those.
If you haven’t tryed this salad you will love it. It will last for 5 days. One can of cherry pie filling. Add any fruit. You will love it.
I usually have vanilla yogurt and a couple cans of tropical fruit on hand. Drain the fruit well, you can also add extra fruit to go with it, and add a little yogurt. So good
