Soft Gingersnap Cookies

I don’t know why this recipe is called “Soft Gingersnaps”.  I should really be “Soft Ginger Cookies” because they don’t snap.  They are soft.  Regardless,  I love ginger cookies and I love how the tops on these crack.


Here’s the recipe.

2 eggs
2 cups white sugar
1 c shortening or margarine
2/3 cup dark molasses
2 t soda dissolved in 2 T water
1 t baking powder
1 t cinnamon
1 t ginger
1/2 t cloves
1 t vanilla
5 1/2 cups flour

Cream the sugar and shortening.  Add eggs and beat well.  Min in molasses and soda.  Add dry ingredients.  Chill several hours or overnight.  Form into walnut sized balls and roll in sugar.  Bake on a cookie sheet in 350 oven for 10-12 minutes.  Makes about 5 dozen.

I have one bag in the freezer waiting for company and one bag sitting on the counter ready to eat.  If you’re in the neighborhood stop by and enjoy one…as long as you can stand a messy house.  Oh I would so much rather sew, cook or bake than clean.  Honestly…if I ever win a lottery or make lots of money one day, I am hiring a house cleaner.

  1. don’t wait, hire someone now! a few months ago i broke down and admitted defeat – i can’t/won’t keep up with the housecleaning, so i hired a gal to come in for just a few hours and mop, sweep, vacume, and clean the bathroom. it’s been a real weight lifted off my shoulders, let me tell you! i still need to de-clutter a couple areas for her to clean, but for the most part, the house looks and feels so much better. it’s worth it! and i can’t really afford it either, but i gave up going out to lunch at work all the time.

  2. I am with you—I would rather sew or bead or cook than clean–and this is from someone who was just the opposite for decades…….I took care of someone with Alzheimer’s for nine years—Life is too short not to have fun…..we both need the maid….

  3. Okay if I steal your recipe?! I like ginger snaps…but don’t care much for the “snap”!!! These sound great…do you think that if I roll them tiny…like half a walnut size…that they’d do as well? I am looking for a cookie to make very small balls…to fill a tin with small bite size cookies…
