Over the weekend we enjoyed an imprompto campfire at our friends house.  I wanted to be polite and bring something to share but only had an hour before it was time to go. I quick whipped up our favorite summer time bars….Smores Brownies. I thought I would share the recipe with you….
Spray your pan with cooking spray. Then line the pan with graham crackers. Mix up your favorite brownie mix from a box or from scratch. I am a “from scratch girl” so here’s my super simple recipe.
2 sticks of margarine softened
2 eggs
2 t vanilla
2 cups of sugar
1/2 c cocoa
2 cups flour
Mix. Normally I would add white chocolate chips or mini m&m’s and bake them for 23 minutes in a 350 degree oven but for smores brownies, you need to put the batter on the graham crackers and spread it out.
Bake for 25 minutes in a 350 degree oven. Take them out of the oven. Put marshmallows, chocolate chips and nuts on the top. It’s not picky about how much. I usually just empty the left over bags that are in the cupboard. Put it back in the oven and bake 4 more minutes.
The bars come out ooey and gooey….just perfect. After they came out of the oven I put mine in the refrigerator to cool them off so we could get to our friends house in time but hopefully you are more organized than I am and can just let them cool naturally on the counter.
