We have a new favorite way to eat potatoes thanks to my daughter Kayla.
To start out with I put a insert into the bottom of the pressure cooker. Â Then I put about a 1/2 inch of water in the bottom of the pot. Â I put my washed potatoes in the pressure cooker. Â I cook them on full pressure for about 14 minutes. Â I let the pressure release on it’s own.
Then I wipe the potatoes with canola oil. Â I smash them down. Â Then I sprinkle the potatoes with onion and garlic powder. Â I put them in the oven at 425 degrees for about 15 minutes.
The potatoes get a bit of a crust on the outsides and the inside stays soft. Â In a way in reminds me of a bread with a crust…or twice baked potatoes without all the extra calories. Â I love these potatoes…everyone who has tried them does.
For me, it’s so easy. Â I’ll do the pressure cooker part putting enough potatoes in for two meals early in the week. Â When I want them for supper I just grab them out of the refrigerator and continue the cooking process.
The other thing I love about these is that I always have all the ingredients I need to make them. Â I’ve been tempted to sprinkle a little cheese on them but honestly, they are so good they don’t need it.
I’ll have to try this calorie intake minded version…the cheese laden version sure is yummy!
I’ve made these, too. The family thought they were a little strange at first, but they really liked them.
Our daughter in Canada made them for us and they were delicious. Of course you can dress them up as “bad” as you want – but this way is fast and good.
