Since having Georgia, I’ve been up at mom and dad’s quite a bit to help watch the childcare kids. One would think that if I’m going up to their house often, I’d be seeing lots of them, but unfortunately this isn’t quite the case. So I’ve also been coming up on other days or coming up a day before watching the kids, or staying a day after. Either way, I’m up at mom and dad’s a lot! With Jason working lots, we always joked that I’d be hanging at mom’s the majority of my maternity leave anyways….and I’m actually quite happy about it.
Before I come up, especially if I’m going to be gone for a few days, I try to make a supper or something for Jason so that he doesn’t have to eat pot pies or fries for supper…Also because if he’s super tired or had a really long, hard day, he’ll just come in and go to sleep without supper.
A week or so ago, I was planning on coming up on a Sunday and staying until Tuesday. But before I left, I whipped up a batch of sloppy Joe Biscuit cups because I know that Jason loves them!
They are seriously one of the most simple things I can make–And they are great! Especially appealing to kids!
Lots of times, I’ll just use two cans of refrigerator biscuits, but since I was home and had time, I made them with homemade biscuits. You can find mom’s recipe for them here—
When making these with canned biscuits, I use two for each muffin hole.
Here’s the rest of the recipe:
First start by browning two pounds of hamburger and make it into sloppy joe or maid rite meat. I make mine with ketchup, brown sugar, liquid smoke, and worcestershire sauce of varying amounts depending on what I have on hand. You could also use canned Manwich too. However you make sloppy joes, just make two pounds of hamburger into that.
Next, spray a muffin tin. Place two canned biscuits dough sections or one biscuit’s worth of cut out dough into each muffin space. Press it out so that it covers the bottom and up the sides of the muffin hole. Next, spoon the sloppy joe meat onto each of the biscuits. Sprinkle with cheese and cook according to your biscuits directions whether that be according to the package or the recipe you chose to make. Sometimes I end up cooking them just a bit longer to make sure that the dough underneath the meat is cooked through.
AND THAT’S IT! Supper can be done in just a few minutes–especially if using the refrigerator biscuits and if you are able to have the hamburger already cooked up!
We always joke that Jason eats like an 8 year old–and this recipe proves that is still true!!!
