Sausage And Apple Stuffed Acorn Squash

I’ll admit..I really like Facebook.  I love keeping up with family but there are other things I love too.  The awesome pages that show me crafts for my kiddos, DIY projects and recipes are my favorite.  Right now my personal favorite is Tasty.  They show really fast videos – like only a minute long- of quick easy and really great looking recipes.  One recently came in my feed that I just had to try,  Sausage And Apple Stuffed Acorn Squash.

Oh my, it is really good.  It’s super tasty.  There are apples in it that give it a wonderful sweet flavor.  Coupled with the sausage….Mmmmm.

2 Small – Medium Acorn Squash (or 1 Large)
1 Chopped Onion
2 Chopped Stalks Of Celery
1 Tbsp. Olive Oil
1 Tsp Salt
1 Tsp Pepper
1 Tsp Fresh Rosemary-I didn’t have this so skipped it.
3 Chopped Cloves Of Garlic  
1/2 lb Sausage
1 Chopped Apple
1 Cup Of Panko Breadcrumbs-I didn’t have this so crumbed a couple pieces of real bread.
1/2 Cup Parmesan Cheese

Using a sharp knife cut off the very top and bottom of each squash to create a flat base on each side (being careful not to cut through the center cavity). Slice the squash in half, scrape out seeds to create individual bowls for the stuffing. Drizzle each squash half with olive oil, salt, and pepper, and roast in a preheated oven at 400ËšF (200ËšC) for 40-50 minutes – or until fork tender.  

While squash is roasting – in a large fry pan over medium heat – heat oil and add onion, celery, salt, pepper, and rosemary. Cook until onions begin to soften. Add garlic and sausage, until sausage is browned on all sides. Add apple until slightly softened. Finally mix in Bread Crumbs and Parmesan cheese just until incorporated. Remove from heat.  

Once Squash has finished roasting (when you can easily poke it with a fork) remove from oven and fill each with prepared stuffing mixture. Return to oven for 20 minutes – adding a sprinkle of parmesan cheese to the top for the final 5 minutes.

  2. What kind of pork sausage are they talking about. I usually just buy Jimmy Dean breakfast sausage but not sure if that’s what they’re talking about. Can anyone help?

  3. Just made this – so good! So filling! I was snacking on the filling before I stuffed the squash and it had no flavour. Once it was baked in the oven – wow!! I did change the breadcrumbs to (made) Stovetop Stuffing mix b/c my breadcrumbs are stale. Would make again!
