Today I’m telling you about a “cookie” I often make around Christmas time. I make them in mini muffin tins. I don’t know why I don’t make them more often. I think the main reason is that I forget to buy Rolo candies and they are one of the main ingredients in these cookies.
Last year at Christmas time I had bought Rolos with the intention of making these. Then I got sick and was on the diet so couldn’t eat them…so I didn’t make them. The other day I saw the Rolos in the cabinet and thought I better get those used up as they had been here since Christmas.
To make them I start out with my brownie recipe. I’m sure you can use a box mix of brownies but I learned long ago that we all prefer my homemade brownie recipe to box brownies and they are super quick to mix up too.
Here’s the recipe:
2 cups sugar
2 eggs
2 sticks of softened butter
2 teaspoons of vanilla
1/2 cup cocoa
2 cups flour
I mix the first four ingredients together and then add the cocoa and flour.
The recipe is about as user-friendly as they come. The dough ends up looking like this…Pretty thick.
I use a small tablespoon-sized scoop and put plopped the dough into mini muffing tins.
I put them in the over at…350 degrees. Then after ten minutes opened a pack of Rolos and stuffed one rolo candy into each brownie muffin.
I popped them into the oven for a few more minutes. Then took them out of the oven.

Let them cool for about 20 minutes before taking them out of the tins. Then take a knife and run it around the outer edge of the circle.
These are so good. Everyone always loves them.
If you try them, let me know. I do know one thing for sure. I’m going to go write Rolos on the grocery list right after I’m done writing this blog post because I don’t want to wait all the way to Christmas to have these again.

Have you ever tried the pretzel Rolo snacks?? Set several of the pretzel squares on a baking sheet. Put one Rolo on each. Put in oven at about 250 to 300 for about 3 to 5 minutes to soften the Rolo. Take out of oven & put an M&M on top, pressing it down slightly. Yummy!! For Christmas I use the red & green M&Ms
I make those at Christmas. I had bought these with the intention of making them at Christmas but then was taking oral chemo and on the diet so they never got made. I had the Rolos so made these instead.
The Rolo muffins sound yummy. I make cookies with Rolos. I haven’t been able to find any Rolos in grocery stores. I,ll have to try the corner stores. Plan to try your muffin recipe when I find some.
I’m wondering if you could use mini muffin tin liners? Maybe they wouldn’t have to cool to be taken out of the tins.
We make these too – they are a favorite here. Sometimes we substitute the mini Reese’s cups. Sometimes I also make them in a 9×13 pan and serve them with ice cream for the branding crew. I haven’t made them in a while – thanks for the reminder! I’m craving them now!
I plan on making these sometime in the future – am trying to lose weight so don’t have to take cholesterol medicine for ever! Thanks for the yummy sounding muffins!

Doesn’t look mini to me either. My mini has a lot more cups. I think this looks like a regular muffin tin A Rolo would take up a lot of space in a mini. In my minis anyway. I could be wrong.

Approximately how many does it make? I have a 24 cup pan.

Could something be substituted for the candies? Like a few chocolate chips instead? The brownie recipe looks so good…
I think I need to try these. I have bag of Rolo candies in freezer I was going to use on pretzels. I make like gal above wrote except I put a half pecan on them. I’ve had with M&Ms too, both good. Your brownies sounds delicious!
