Rick cooks enough around here that he got his own series here on the blog, Rick in the Kitchen. Today isn’t really a recipe…but then again, it is.
Here’s a little backstory. Rick is someone who likes a sweet snack before bed. Me being diabetic, it’s not the best idea for me. Occasionally, I have a half or quarter of a piece of what he has, but mostly, I pass.
The other night, he asked if I had graham crackers. I was on my way to bed, knowing he was probably doing something in the kitchen. I said I did. He said okay. I’ll be up after a bit. We planned on watching a basketball game in bed. It was a late game, and that typically means we watch it in bed.
A short while later, Rick came upstairs and said, “I made one for you.” Then he hands me a piece of toast and says I couldn’t find any graham crackers. Take a bite. I did and oh my YUM. The next day, the grandkids were here, and I made it for them. They are a picky little bunch, but I’m happy to say, EVERYONE (I mean everyone) loved it.
Rick used toast, but I used some leftover hamburger buns.

I toasted them…

I buttered the toasted buns, then put cinnamon and sugar on them.

Rick had made frosting, and his idea was to put frosting over the top.

Oh, my word friends… It tastes just like a warm cinnamon roll. It’s so good…and so simple. It’s one of those “too good to be true” things. Rick made homemade frosting by mixing melted butter, a little cream, vanilla, and powdered sugar. Any white frosting would do, even warmed-up canned frosting.

This was a such a big hit that later in the day, Gannon asked if we could make more. He is my worst eater, so that is a real compliment!!

Great improv/idea for leftover hamburger buns, Rick! I passed it on to my daughter who has four hungry boys who enjoy weekend breakfast treats.
Yummmmmm! That sounds good!
Ok I need to know all of the recipe, prep as I really want to try this, being a diabetic also…always need a little sweetness.. thanks Rick!!
There is really no prep. It’s just cinnamon and sugar mixed together for your liking and frosting on the top. Rick makes his own with butter, vanilla, powdered sugar and a splash of milk but store bought frosting would work too.
Oh my, that does sound delicious! Thank you for sharing and I will definitely try it and look forward to Rick’s recipes!!!
I’m 80 years old and I’ve been making cinnamon toast since I was probably 7 years old. We buttered the white bread lavishly and then sprinkled cinnamon sugar over it before baking it in the oven. Never put frosting on them but the toast is delicious without it. Glad Rick made something the kids like.
Hi Jeanne
I’ve been making cinnamon sugar tst for years when you & Stacey were little & my grandkids were lil Maddie loves it I think I made her & Krista a loaf one AM when I stayed there yrs ago they gobbled it right down but never put frosting on them think I’ll do the bun way w/ frosting soon ! Your Rick sounds like a great guy ! Congratulations so very happy for you & him ! Can hear the happiness in your blogs
I like cinnamon toast too. For some reason my mother seemed to be against that, but it was okay to have jam – go figure! I probably would skip the frosting. Is this what he was going to use the graham crackers for? I’m having a hard time imagining using crackers to make these.
