My husband loves anything rhubbarb. This recipe is especially his favorite….mine too because it is super easy and uses lots of eggs (remember my chickens are big egg layers) .

Here is the recipe:
Crust
1 c melted butter
10 T powdered sugar
2 c flour
Mix together and press into a jelly roll pan. Bake 15 minutes at 350 degrees.
Filling
4 c diced rhubbarb
4 eggs
2 c sugar
Mix and pour on crust. Bake 45 minutes at 350 degrees.
I have asked my friend Mandy for this recipe three different times. Once I lost it. Once I washed in my jeans and this last time….I am posting it on the blog so I don’t have to ask for it again! Sometimes I am so unorganized. Thanks for being patient with me Mandy!

Hello Jo! I am a Minnesotan! The ‘dish’ is a casserole, and the food that is inside it, is hot…thus our Scandinavian ancestors served it, saucy, at a pot-luck dinner with the warning, “Hot dish” so no one would pick it up and get burned! The only dish we call a casserole is ‘GreenBean Casserole’ and that is in a “hot dish” as well! I tend to think it is a Minnesota-Wisconsin thing.
