So I made a really good rhubarb dessert….Hubby said definitely make it again. Â I will it’s really good. Â The saddest part though….I’ve had the cookbook that I got the recipe from years and years ago. Â Darn I wish I had tried the recipe way back when I first bought the cook book. Â We could have been enjoying it for a long time. Â The cook book is from 1994…hmmm. Â Well let’s not let another minute pass before I send the recipe out and on to you to give it a try.
The recipe calls for Bisquick. Â I didn’t have any. Â I ended up looking up a recipe for a substitutions for Bisquick and found this. Â I did a 1 1/2 recipe of that and then continued on with the recipe for the rhubarb pudding cake. Â Here’s that recipe:
1 1/2 cups of bisquick or what I told you about above
2 cups sugar
1/3 cup vegetable oil
2 eggs
Mix all of that together. Â Then add 3 cups of diced rhubarb. Â Mix again. Â The mix will seem really thick and you’ll likely wonder if you left out liquid ingredients…you didn’t. Â It suppose to be thick.
Spread it in a greased 9 x 9 pan. Â Bake at 350 F for 40-45 minutes.

The recipe says this will rise and fall in the middle. Â It is crusty on the top and like pudding on the bottom.
That’s a pretty good description.
Sadly we don’t have a lot of rhubarb this year. Â We transplanted some from the farm. Â It’s doing good but I’m told I’m not suppose to harvest much, if any, the first year…shucks. Â I do go out to the farm and pick some once in awhile. Â I’m thankfully for that and will be making this again for sure!
Jo, at what temperature do you bake it and for how long? I have lots of rhubarb right now and am tired of making pies. This looks good.
Did you use a 9 x 13 pan?

I did a rhubarb pudding cake once, but the recipe just called for a yellow cake (I use a boxed butter cake) and then you put cream on top and then the rhubarb and it sank through and made a custard on the bottom with the rhubarb with cake on the top. I thought it was going to be a mess when I put it in the oven but it was awesome! I need to plant some rhubarb. My gardening skills are pretty iffy lately though. How long does it take to get going?
The first year you plant you shouldn’t harvest. After that, you’re good to go.
If you can Jo (since your Iowan Farm Girl) would you give me advice about whether I can successfully grow Rhubarb here in South Texas? Or do you think it gets too hot & or humid here. Also how would I go about growing it since I’ve never seen it growing here…should I try ordering seeds or little starter plants? Thanks for any advice you can give.
