This year with all that’s going on with the house, gardening has gone to the wayside. Â I had planted some stuff but I haven’t harvested as I should. Â There’s just no time in the day. Â A week or so ago I made a batch of refrigerator pickles thinking I at least did something. Â Today I pulled them out of the refrigerator for the first taste….oh I remembered why I loved them. Â Then Hubby said…”Oh you made some!!” Â That lead me to make another batch….
Of course then I couldn’t find the recipe that I use so I looked and looked and right then and there I decided that I am putting the recipe up on the blog so that next time I won’t have to struggle to find the recipe.
7 cups thinly sliced cucumbers
1/2 cup sliced onions
1/2 cup green peppers (I omitted these)
3 cups sugar
2 cups vinegar
1 tablespoon salt
1 tablespoon celery seed
1 tablespoon mustard seed
Mix ingredients and refrigerate in a container with a tight lid. Â Sprinkle 1 tablespoon turmeric over the top of the pickles. Â No cooking is needed. Â Shake daily. Â Ready to eat in seven days. Â Keep refrigerated.
These are a long standing taste of summer for our family.
Thanks for the recipe Jo! My mom used to make these and I lost the recipe, we leave out the green peppers too.
