Pumpkin Muffins

This is a family favorite…Chocolate Chip Pumpkin Muffins.


The recipe makes about 34 muffins so be aware.  It’s not a problem though because they freeze well and the kids snap them up in no time.

Ingredients:
4 eggs
2 cups sugar
1 can pumpkin (15 oz)
3 cups flour
2 t baking soda
2 t baking powder
1 t cinnamon
2 cups chocolate chips

Mix all the ingredients in your mixing bowl.  Mix well.  Fold in chocolate chips.  Fill cupcake liner 3/4 full.  Bake at 400 for 16-20 minutes.

I freeze two or three in a ziplock bag.  When packing a field lunch for Hubby I just toss the frozen muffins in his lunch box.  By lunch time, they are unthawed and ready to eat.

  1. Oh boy! Another of your great recipes. Can’t wait to try these pumpkin muffins… I’m hoping I can add some nuts instead of the chocolate chips. Fingers crossed.
    BTW, I made your Swedish Apple Pie [no pie crust to make!] and it is totally incredible! Thank you for sharing the recipe. This is going to become a family favorite around here, I betcha!
