This is a family favorite…Chocolate Chip Pumpkin Muffins.
The recipe makes about 34 muffins so be aware. It’s not a problem though because they freeze well and the kids snap them up in no time.
Ingredients:
4 eggs
2 cups sugar
1 can pumpkin (15 oz)
3 cups flour
2 t baking soda
2 t baking powder
1 t cinnamon
2 cups chocolate chips
Mix all the ingredients in your mixing bowl. Mix well. Fold in chocolate chips. Fill cupcake liner 3/4 full. Bake at 400 for 16-20 minutes.
I freeze two or three in a ziplock bag. When packing a field lunch for Hubby I just toss the frozen muffins in his lunch box. By lunch time, they are unthawed and ready to eat.

That looks like the recipe I use. To call them muffins is kind of a fib, they are really yummy, yummy cupcakes!!
