I was hopping around blogland and found a super, simple, awesome recipe for pumpkin cookies. It’s another one of the those recipes I was tempted to try because it was just TOO easy.
Here’s the recipe.
1 spice cake mix (do not follow the directions)
1 15 oz can of pumpkin
Mix these two together. Add chocolate chips. Bake at 350.
The first time I made them I used chocolate chips. The second time I used white chocolate chips. I liked the white chips better. I am thinking today I might make them with raisins….yes I confess…I have made them THREE days in a row. Here’s another confession. I have squash coming out my ears from my garden, so I substituted two cups of squash for the pumpkin. They are wonderful! …hm.. I wonder how carrot cake would taste….

Let me know how the raisins go. My partner thinks my pumpkin cookie recipe is too boring, so I’m on the hunt. I’d love to find something this simple that would work with only the two ingredients or just with nuts or raisins added. Thanks for sharing!
I would love to try this cookie recipe with dried cranberries as I like them a lot better than raisins.
Oh thanks for reminding me of these/ They make great muffins too. Kinda smooth the peaks down before baking. Aren’t these wonderfully yummy? Sunflower seed are good mixed in them too.
