Soup season has it so I had to give this recipe a try, Potato Cabbage Soup with Ham.
It was delicious and was a great way to use the potatoes and cabbage from my garden.
We doubled this batch as we were feeding quite a few and my philosophy on soup…make lots because it always tastes better the next day!
Here’s the recipe:
4 c shredded cabbage
3 medium potatoes, diced
2 medium carrots, diced
1 onion, diced
2 C. ham, diced
4 T. butter
3 T. flour
2 C. water
1 can chicken broth
1 tsp. dill
1/2 tsp. black pepper
Melt Butter in a medium saucepan.
Add potatoes, carrots and onions.
Saute mixture about five minutes.
Stir in flour and cook one minute. Add the cabbage, water, broth, dill and pepper, and bring to a boil.
Reduce heat and simmer covered about 20 minutes, stirring occasionally.
Just before serving stir in the ham. This serves four.
It was yummy and I was right…it was better the next day!!

I just made this soup – It Is Great ! I didn’t have cabbage, I used shredded Kohlrabi.
