Today, was a no school day. I’m sure everyone has heard by now that Iowa was hit with a big blizzard. We have snow drifts everywhere that are thigh high yet there are places where it is bare grass. It’s CRAZY what the wind can do with 12 inches of snow. As long as the kids were home from school, I decided to get a few things done….write the Christmas letter, get the Christmas Cards started, wrap the rest of the presents and bake the rest of the cookies the kids need for their cookie walk benefit this weekend.
Here’s the batch of star cookies I made minus the dozen or so the kids snuck from me.
I used Hershey’s Kisses until I ran out then I switched over to chocolate stars. What is shown here is a double batch. If you need a recipe, here it is.
Preheat oven at 350.
1 cup butter
1 cup brown sugar
2 eggs
1 cup peanut butter
2 t vanilla
2 2/3 c flour
2 t baking soda
Chocolate stars or Hershey’s Kisses
Cream the butter, sugar, eggs, vanilla and peanut butter. Add the remaining ingredients except the chocolate. Make cookies in VERY small balls and roll in extra sugar. Bake 8 minutes. Remove from the oven and top with either a Chocolate Star or Hershey’s Kiss. Bake 2 more minutes. Cool thoroughly on a rack or the chocolate will stick to each other when you stack them in your container.
It was a perfect day and perfect timing for a snow day. I got so many things done that now it is finally starting to feel a bit like Christmas. I don’t know if it’s the snow or checking things off my list…either way, it’s a nice feeling.
I think you forgot to mention the peanut butter in the ingredient list. Thanks Jo for all do with both your sites.
