MORE ZUCCHINI: Zucchini Soup this time.

I was writing blog posts and hopped over to Youtube so I could put a link in a blog post I was writing.  I ended us down a rabbit hole as this recipe popped up.

I am DEEP in the throws of ZUCCHINI.  I’ve been trying to use it the best I can.  I’ve had zucchini fried with veggies almost every night.  It’s a favorite of mine but after many meals of it, I’m looking for new ways to eat it.

I’ve made zucchini bread and cakes and treats…I was looking for something different.  So…when I saw a soup recipe, I couldn’t resist giving it a try.  My only problem…I don’t have many tomatoes from the garden ready.  I only had a few cherry tomatoes.  I hoped I could find enough ready.


I have two giant overgrown cherry tomato plants outside my back door.  I’ve been getting a few cherry tomatoes every day for the last couple of weeks.  Cherry tomatoes rank high as one of my favorite food ever…the garden variety warmed in the sun are my favorites.  I have one yellow and one red cherry tomato plant.  I eat a couple every time I let Rosie out the back door.

Anyway…I checked and did have enough.

This is the video I watched.

I added…a chicken breast to mine.  I cut it up and fried it in the pan before I added the zucchini or other veggies.  I was having this as a lunch meal so adding the chicken breast made sense to me.

I liked the idea of the broken spaghetti noodles in the soup.

In the video, the cook says the egg and cheese are optional.  I did add them….YUM!!

The water in mine cooked down and I let it be that way.  Seriously it was so good I had two bowls.


I’m really excited as this Youtuber “Italian Grandma” or Buson-A-Petitti has lots of other zucchini recipes.  You can find them HERE.  You can bet I’ll be trying more of them.

  1. I tried the butter zucchini spaghetti last night and it was amazing. It sounded so weird, but I really liked it. Creamy, garlicky, buttery, cheesy. Thanks so much for sharing. Now this one’s on my list.

      What a grand way to fix zucchini. I had some fried with onions last week this week it’s zucchini soup. Yummmmm

  4. There’s a restaurant here that’s famous for their “Cream of Tomato & Zucchini Soup” & it’s delicious. The soup comes in on the food truck & they “doctor” it up. I know that because a former kitchen helper told me but I don’t know the details.

    1. Zucchini is one veggie that I can’t wrap my tongue around. Not sure what it is as I enjoy yellow squash but zucchini, not so much. I will pick it out of veggie combos served at restaurants. I like it in zucchini bread and that is ab out it. I love tomatoes though.

  5. We always made a lot of zucchini relish, and it was great on everything! Sandwiches, hamburgers, hot dogs, etc. The recipe is in the Ball Blue book of canning, and we shredded our zucchini instead of chopping. It was way easier – larger shreds, not small. We would can about 40 quarts every year.

  6. Yum…this sounds delicious! My husband does not like zucchini, but I think I will make a batch for me, and freeze it to have on hand for times when he isn’t at home at dinner or lunch time.
