Mock Zucchini Apple Pie

So a bit ago I came across a recipe for Mock Zucchini Apple Pie.  Here’s a link to the recipe I saw on line.  I didn’t know if I dared to give it a try….but with the counter covered in zucchini, I figured “what the heck”.

..now look at that sweet innocent pie.  Who would ever suspect that it wasn’t apple?  Hubby that’s who.  I asked him how he suspected it.  He said that I was lamenting on how to use up all the zucchini.

I asked him how it tastes….his response, it doesn’t taste like apple.  But, I think he was teasing because Kalissa and I both had a piece and neither of us could taste the difference.  Here’s how it looked cut…

I think I’ll actually make it again.  I’m trying it out for an upcoming picnic.  I’m not telling when or for who though…I don’t want anyone to be suspicious before they give it a try.

Hubby grumbled a bit about me trying to trick him. He says he doesn’t understand why I planted so many zucchini as once they are ripe, all I do is fret about what to do with them all.  He’s right.  I do.  If anyone has any good ideas to do with zucchini, feel free to pass them along to me.

  2. I shred mine and then make meatballs and meatloaf ahead of time and freeze so all I have to is thrawcand cook. I also shred a bunch and put in two cup portions and freeze it for baking over the world ter

    6 c. sliced or shredded zucchini, 1/4 c. chopped onions, 1 c. shredded raw carrots
    1 can cream of chicken soup, 6 oz box stove top chicken dressing , 1 stick of melted
    margarine or butter 1 cup milk
    mix up and bake 350 degrees in greased bowl 1 hour and enjoy
    TIP I shred my zucchini and carrots in food processor

  5. I’ve taken a potato peeler and made fettucine “noodles” with the zucchini and then sauted it with olive oil, butter, salt and pepper. Family really liked it.

    The other was a s’mores bundt cake. It was good but it was too chocolate for me. It had icing with mini marsh,allows and mini chocolate chips sprinkled on top. Your child care kids would love it.

  8. I have a spirilizer and I use it for zucchini. I then use the zucchini instead of pasta or I use it in a stir fry. My favourite is sautéed red peppers, onion and shrimp with fresh squeezed lemon juice and lemon pepper. Then add spirilized zucchini at the end for about 2-3 minutes. A little cilantro can be nice with it as well.

  9. My zucchini have been a bust. I was lucky to get maybe 4 or 5 zucchini. Then some kind of blight hit them and boom! No more zucchini plants. I’ll have to read up this winter and see what I did wrong, It was my first garden. Doesn’t help that the daytime temps are in the nineties and nighttime temps are in the low eighties.

  10. I have had zucchini chocolate cake and it was really good! You couldn’t taste the zucchini either! I was like hubby though and didn’t really want to try it! Keep your lips sealed Jo and don’t tell anyone there is zucchini in your pie!!!!

  11. Zucchini relish!! We would make enough for the whole year and can it in quart jars (six kids!). We used it in everything – egg salad, hamburgers, hot dogs, sandwiches, sausage. . .never bought store relish and now we are spoiled.

    Also like it sauteed with onions and butter as a side to dinner. Have to catch it before it gets too big though. :-)
