One of my favorite publications in the world is the Iowa Farmer Today. It comes every week on Thursday and is filled with crop reports, information on farm machinery and everything else farm related. Imbedded between all of these articles is a one page section that features recipes…not just any recipes…but good home cooking style recipes. That’s where I found this scruptious recipe for Strawberry-Rhubbarb Pie.
Strawberry-Rhubbarb Pie
2 c rhubbarb chopped
2 c strawberries cut into pieces
1 cup sugar
1/8Â t cinnamon
1 T melted butter
2 T corn starch
1 T tapioca
Mix the ingredients together. Put in your pie crust. Cover with your other pie crust. Brush the pie crust with milk and sprinkle sugar over the top. Bake in the oven for 20 minutes at 400. Turn the oven down to 350 for 45 minutes. Let it cool.Â
m…m…m…yum! Like with many fruit pies, it taste even better the next day. Â
