Memorial Day Fun…

I already told you about Friday and Saturday here at the house. Now, here’s a recap of Sunday and Monday. I didn’t take many pictures. I was too busy enjoying the day.

Sunday morning started with a cheesecake party. Yep. We had cheesecake for breakfast. On Saturday, Rick had made it. Oh my word…Delicious!!

If/when he makes it again, I will take pictures and wrangle the recipe from him. Seriously, it was to die for. My cheesecake has always been dense. This was wonderfully creamy.

Then Craig and Rick, along with Carver, went golfing. Craig had never gone…Rick used to golf a lot. They had a great time. Craig is now insistent that he needs his own clubs. We all told him Father’s Day is coming. HA!!

While the boys were golfing, I was in charge of the smoker. Rick had a pork butt on it, and plans were to have that for lunch. The boys came back, and the temp had barely moved. Craig is a smoker too, and he said that sometimes when smoking something, the temp gets “stuck”. So we left it to smoke longer and made some egg rolls. We made a batch of sausage and another batch of shrimp egg rolls.

I made the filling. Kelli was the roller, and Craig was the fryer.

They were SO good. I’m going to tweak the seasoning on the shrimp eggrolls next time.

It was about then that the smoker caught on fire. YES, it caught on fire. Rick and Craig took care of it. They brought the pork butt in, and Rick tried to salvage it and did!!! This is Georgia hanging on to Rick. She really likes him. He likes her too.

The food all weekend was great!!

Later in the afternoon, Kelli and I watched a WNBA game and Georgia built this…

Eli and Emmett were busy playing basketball. Eli is an exceptionally good dribbler. I told him he couldn’t really be a great basketball player unless he could dribble without watching the ball. So he lifted his head and dribbled out to my van and back without watching the ball!!

Craig said he’d till the garden, but went to start it, and it wouldn’t start again. UGH. This tiller is not cooperating at all. Rick ended up taking it apart again after they all left and figured out the problem. He ordered a part…so my vegetable garden still isn’t tilled. It’s okay, but it’s getting late to plant a garden.

After that, Rick and I hung out and enjoyed the silence. We shot some darts, had a drink, and listened to music.

Gosh, we like the kids and grandkids, but being alone is great!! We spent lots of time sharing stories with each other about happenings over the weekend. It was a good weekend, but boy…were we both pooped!! But like Rick said, “I’d do it all over again!”

  1. Aww, sounds like a great time! Very happy for you, Rick sounds great. I’m
a little envious, I must admit. Breaking up with my man a few months ago was the right decision, but, like you did, I miss adult male company. And fun. And love. But maybe good luck will strike again.

  2. It’s not too late to plant. Almost every thing except cool weather crops like peas. I plant carrots, beets.lettuce, green beans, and short day sweet corn till July 16. Our climate change with late falls let’s us plant longer. Just planted tomatoes, they will catch up fast.

  3. I’m so happy you met Rick, he’s sounding like a keeper! The cheesecake looks delicious! Hugs,

  4. So happy for you! Rick sounds like a great guy and that he gets on so well with your family is fantastic!

  5. Good morning Jo.
Sounds like you had an awesome Memorial Day. I am so happy that you finally found “Mr. Right”. He loves the family, the family loves him and I know he is really smitten with you. I think you have found a “keeper” in Rick.
God bless you Jo and family. You are a remarkable woman. Thank you for being you.

  6. I’m still getting mine planted. did some tomatoes and peas that I had growing in a pot…. hope they survie
