Over the weekend, I went to the local health food store to get some kale. Â It’s the only place in my area to find kale and I really wanted some so I could make my daughter’s recipe for Massaged Kale Salad. Â I know the name sound nasty but it’s actually a VERY good salad. Â Even my non salad eater hubby likes it.
While I was there, I decided to give this salad in the deli section a try….Marinated Beet Salad with Feta.
I like beets but is doesn’t have a strong beet flavor…oh it was SO good. Â Now I am on the hunt for a recipe.
On the side of the package the ingredients are listed as:
beets, red onions, white wine vinegar, feta cheese, canola oil, walnuts, mint, salt and pepper.
Does anyone have a similar recipe they might share….oh I’d the recipe!!

Jo, that doesn’t sound too difficult. I think you could experiment just a bit and come up with it. Check out a oil and vinegar dressing recipe to get your porportions on that and then go for it.
You might not believe what I just had for breakfast. After reading this post I took some pickled beets I had in the fridge, diced them a bit, added a spoonful of Feta crumbles, a bit of onion, salt & pepper and a drizzle of olive oil. Quite yummy! Thanks. Another way to get those nutritious beets in my diet.
