Let them eat (cheese)cake…or whatever Kalissa decides

Summer schedule is in full force here.  School is out and it seems we are in a never ending cycle of Saturdays for my 14 year old daughter.   Previous summer to this, I did in home childcare all summer so  childcare days felt like workdays to everyone in the house.  

My hugest pet peeve is to be working with either the blog or my website www.makinglearningfun.com and get up to find no one did anything the entire time I was working.

This summer we have a new rule.  Kalissa has to cook or bake something of her own choice every day…remember it’s her choice…so today, we had cheesecake for lunch….

It was delicious…even though it was not completely cooled!   

She is letting me share her recipe.
 
Classic New York Style  Kalissa Style Cheesecake
Crust:
1  1/4 c graham cracker crumbs
2 T sugar
1/4 c melted butter
Mix and press into a 9″ spring foam pan.  Bake 8-10 minutes in a 350 degree oven.  Cool slightly.

Filling:
32 oz cream cheese at room temperature
1 1/2 c sugar
4 eggs
4 T vanilla

Beat cream cheese on low for two minutes until smooth.  Add sugar, mix.  Add eggs one at a time mixing between.  Add vanilla, mix and pour into the crust.  Bake 1 hour 15 minutes in a 300 degree oven.  Do not remove from the oven.  Simply turn the oven off and let in cool in the oven for one hour.  Refrigerate.  You can garnish it with cherry of blueberry pie filling.

Like I said, the cheesecake was delicious….but, I think I am going to have to make a new rule…CLEAN THE KITCHEN AFTER YOU ARE DONE COOKING-without me having to tell you! 

Oh the joys of parenting a teen.  Just when I think I have issue solved up pops another issue.
