Kelli’s Chicken

Kelli has been telling me and telling me about the wonderful chicken she makes in her cast iron pan her Aunt Wendy gave her for a shower present.  She told me and told me that I need to get a pot so she can make it here at my house for me.  Well finally I got a pot and Wednesday she made chicken for me.

Here it is fresh out of the oven…It doesn’t look wonderful but it sure was.

We here are not fans of chicken skin so we started out by removing the skin….

4 hind quarters
Mix together Garlic Salt- Lawry’s Seasoning Salt and Black Pepper
Season each piece generously with each seasoning rubbing the seasoning in. Chop one onion and place in the bottom of a large cast iron skillet. Arrange chicken in a single layer in bottom of skillet. Put lid on skillet and place in 350 degree oven. Cook for approximately 50 minutes.  Use a meat thermometer to check for proper chicken temp at end of cook time to ensure that the chicken is fully cooked. Cook longer if needed.

How easy is that??  You could even season the chicken in the morning before work and place everything in your baking pan.  Then when you get home pop it in the oven.
