When Kayla was here last weekend, she brought things to plan a meal. I was game for anything. No cooking is what always sounds good and she was going to cook this…
She took a pan and put in two containers of cherry tomatoes. We had half of a large tomato left over, so we chopped that and threw it in too. Then she put in one pack of creamed cheese. All of it drizzled with olive oil…

…and sprinkled with these spices.

Into the oven it went at 400 degrees for 40 minutes.
It came out looking like this…

Kayla took a potato masher and mashed and mixed it all together.
Meanwhile, I started boiling water for noodles. We used the protein noodles.
Then she added half of a bag of spinach to the mix.

As that was stirred in, it wilted.
Next up, add the noodles and stir.

Earlier in the day, she had made sourdough bread with her homemade starter.

It was the PERFECT combo for supper.

The noodles were fabulous and so little work. I love using fresh veggies in dishes.
Kayla said she made it for Spencer, and he told he it was so good that you don’t even taste the tomatoes. HA!! I thought it was good…especially because of the tomatoes. Either way…it was REALLY good.

I have had this, only I used a block of feta cheese rather than cream cheese. It is delicious! I like the idea of using the cream cheese because, unlike feta, I always have that in the fridge. Recipes that are both good and easy are always appreciated.
So, no heat applied to tomatoes, spinach and caramel cheese? Just the heat from the hot noodles to melt the cheese? And the sourdough bread looks great!
She roasted the tomatoes, cheese and spices for 40 minutes at 400° and cooked noodles separately then added to the mashed tomato mixture.
I’ve made a similar recipe using Boursin cheese, I also add chopped onion and bell peppers. It is delicious too.
Thanks for sharing this recipe. I usually have so many cherry tomatoes in the summer that I can’t use or give them all away. This looks like a delicious way to use them. I love tomato soup and this looks like a few jumps up.
