Kalissa’s WONDERFUL Cupcakes

Kalissa loves Pinterest.  She is especially in love with Pinterest recipes.  It has me purchasing all sorts of ingredients that I don’t typically purchase but it’s all in an effort to get her to cook and to get me not to cook.

Today she tried these….Yummy looking…RIGHT?!?!?

The most unusual thing is that there is an Oreo cookie in the bottom of the cupcake.

They were wonderful and I would definitely recommend giving them a try.  It’s something fun to do with little ones as they can add the Oreos to the bottom and “help”.

This recipe is the exception to her usual Pinterest recipes.  We had all the ingredients on hand.  Here is the recipe.

Mix up one box of vanilla cake mix according to the directions.  Crush up a 1/2 package of Oreo cookies.  Put half of the crushed Oreos into the cake mix.  Mix.  Put an Oreo in the bottom of the cupcake liner.  Fill the cupcake liner so that it is 3/4 of the way full with cake mix.  Bake according to the directions for cupcakes.

Cool.

Here is the recipe for the frosting.
1 small pack instant vanilla pudding
Mix with one cup of milk.
Add 1 T of vanilla.
Fold in one container of Cool Whip until there are no streaks.

Pipe onto cupcakes.  Sprinkle remaining crushed Oreos over the top.

Isn’t that fancy looking, yet really easy??

  2. My daughter loves Pinterest also! She baked all summer when she was home from college. I can always tell when she has stopped by because the kitchen sink is full of baking stuff! She makes cupcakes and takes them back to her sorority sisters often…always a recipe for Pinterest!

  3. I am assuming with the milk & cool whip frosting, the leftover would have to be refrigerated? ….hahahahaha….leftovers, right!!!!
