Great Pumpkin Dessert

I am a gal that uses squash in place of pumpkin ALL THE TIME.  In fact, my family is so accustom to it that they think regular pumpkin is bland.  It’s a good think I feel that way because yesterday when  I went down to the basement to grab a couple of my garden squash from last fall, I found a couple had “age” spots.  I knew it was going to happen.  How can any family use over 100 squash in a winter?!  We gave it a valiant try….but alas, three squash had to go to the chickens and the rest got cooked up.

Some of it will be supper….some will go to the freezer and two cups worth went into this wonderful dessert.

The actual name of the recipe is Great Pumpkin Dessert…but like I said, we interchange squash so here’s the recipe for Great SQUASH Dessert.

1 can of solid packed pumpkin (I use 2 cups SQUASH)
1 can of evaporated milk
3 eggs
1 cup sugar
4 teaspoons pumpkin spice (or, in my world, 2 heaping t of cinnamon, 1/2 t heaped of nutmeg, ginger and cloves)
1 yellow cake mix
3/4 c melted butter or margarine
1 1/2 c chopped walnuts

In your mixing bowl , combine the first five ingredients.  Pour into a greased 9 x 13 pan.  Sprinkle the DRY cake mix over the top.  Drizzle the melted margarine on top of that.  Sprinkle the nuts on top of that.  Then into the oven it goes for 1 hour at 350.  Serve with ice cream or whipped topping….YUM.

With all the sprinkling in this recipe, it’s a good one for kids to help with!  My family really loves this…but anything with sugar is a hit around here!

  1. I make this for Thanksgiving instead of pumpkin pie. My kids like it better then the pie. I make it with pumpkin, no nuts (allergies) and use spice cake mix so I don’t add the spices. We call it pumpkin goo. kp

  2. My mom made this all the time. After she passed, Dad found the recipe and whenever he has to take something to a potluck this is what me make. Funny thing, the first time he made it he used sweetened condensed milk and believes it is way better the way he makes it now.

  3. I always use squash instead of pumpkin too. My mother-in-law always did, so that got me started. My grown-up kids think pumpkin pie made with pumpkin tastes strange :):) Two years ago we got more squash from the garden than anticipated and I canned cooked squash for the first time. Just about have it used up so will need to plant a few hills this year. Your dessert recipe sounds yummy so I’m saving it to try.
