Gluten Free & Grain Free Muffins

Last week on Friday I was hanging out with my childcare buddies and asked if we should make muffins. Of course the answer was yes.

There was a recipe I’ve been wanting to try and serve to Kelli. If you’ve been a long time reader here on the blog you might remember that our daughter Kelli eats gluten free. I always feel bad that there isn’t something here for her so trying these muffins would be perfect. I’d use us the yucky bananas I had. I’d bake with the kiddos and have something for Kelli AND for us.

The thing that drew me to the recipe is that they were grain free as well as gluten free. So often a gluten free recipe calls for some type of flour that I don’t have on hand or one that cost so much money. This recipe has no flour…but it does have peanut butter so if you have a peanut allergy person you’re baking for skip this recipe.

My little helper was excited about all the ingredients…eggs to crack, peanut butter to taste, bananas to mash….

We hurried so they would be done before Kelli arrived as the muffins were supposed to be a thank you spending time outside on the snow hill with my helper. We hoped that Kelli would like them….

and she did.

They really weren’t too bad. I’ll say they aren’t as good as muffins that I usually bake but for gluten free…they were good. Here’s a link to the recipe if you’d like to give them a try.
