From Salsa to Chicken Tortilla Soup

Here is one of the reasons I make salsa…..to make chicken tortilla soup!

This is one of the easiest recipes ever, but definitely one of the tastiest.

Take two chicken breast pieces.  Cut them up into small pieces and fry.  Add a quart of salsa and 3 cups of water.  Heat through.  Ladle soup into your bowl.  Cut a half of flour tortilla into 1″ by 1/4″ pieces.  Stir them into the soup.  Sprinkle a tablespoon or two of shredded cheese over the top and your soup is ready to eat.

How easy is that?

Some in our family put a dollop of sour cream on top too.  It is so good either way.  I don’t add the tortilla pieces to the whole pot of soup because they absorb all of the liquid of the soup if they are in the soup for a long time.  If your salsa doesn’t have corn or black beans in it, you can add them to the soup.

I made up this recipe after ordering this soup in a restaurant.  It is my favorite both because it is fast and because it is so TASTY!
