What I’m sharing today is what I call Potato Nachos. Yesterday we had tacos for lunch (I had Taco Salad-he had tacos). I made an extra large batch of meat and refried bean mixture. For supper last night we had homemade kraut, pork roast, baked potatoes, a salad and rice pudding. I made MANY more baked potatoes than we actually needed. For lunch today…I needed something in a FAST hurry. Hubby came in to eat at 10:05 and I had lunch on the table at 10:15 thanks to leftover pork roast, rice pudding and Potato Nachos.
I unwrapped two potatoes and sliced them into wedges. I sprinkled taco meat and cheese over the top. I popped it into the microwave for two minutes and WA-LA… Potato Nachos!
Typically I do the prep work and have the Potato Nachos in the microwave and all I have to do is push the button when Hubby walks in the door. That makes them even faster. Coupled with a sandwich or left over, it’s a fine lunch meal. My kids like these…and I’ve successfully served them to company too.
If I have more time I often add black olives, green onions, tomatoes and and other taco toppings but today I was in a HUGE hurry.
Leftover baked potatoes are a HUGE favorite of mine for quick meals. Lots of people don’t like to make them as they don’t have time or heating the oven heats up the kitchen too. Baked Potatoes can be made in a crock pot too. That eliminates all the excuses for not making them. I have more recipes that use left over baked potatoes that I will share with you in the future.
We do this with leftover chili, adding cheese and sour cream. I will have to try with taco meat. That sounds good.

We even put chunky soups on our leftover potatoes…lots of possibilities for sure!
I always bake a few extra potatoes. They are great to slice up for pan fried potatoes. So quick and easy.

After I had major surgery one year, I had invited several family members over for supper. They were concerned about my cooking, but I made a potato bar. Basically, I cooked plenty of baked potatoes and had numerous different types of toppings…some of which y’all have mentioned above Everyone served themselves. There is/was a potato place near our local university that had so many different toppings…that served as my inspiration. The potato bar supper was a success!
Hubby and both sons are electricians, so they come home from work very dirty (lol) and very hungry. I’ve started making my own low-sodium taco seasoning mix so I like adding it to hamburger and adding that spicy hamburger to lots of things – it will work perfectly with these potato nachos – this meal will go over REALLY well! Quick and easy is always a favourite of mine!
Great idea! We add a lot of leftovers to baked potatoes. When there’s not enough to make a whole meal, it often works over baked potatoes. Today for lunch, we had leftover crawfish etouffee over baked potatoes. Your nacho potatoes look great.
I have never made baked potatoes in a crock pot. Do they taste like oven baked or nuked? I DO NOT like nuked potatoes. How do you cook them>
Oh be still my heart! LOL! Potatoes and mexican food – swoon! Add some jalapenos and I’ll be there as soon as I can! I’ll bring the salsa! It’s hot and so good. Oh and some pico!
Oh, and forget the farmer! If he wants something to eat, he had better beat me to the table! Just kidding! :)
