Friday night we played cards with our card playing friends. We just get together over the winter for a few nights of playing cards. Most everyone in the group somehow has a farm related job so the rest of the year all of us are pretty busy.
The tradition is that everyone bring some type of munchy, appetizer or something that can be eaten on a small paper plate. Dips are the thing most people bring so Friday I decided to try to come up with something to use of (yet another) of my box cake mixes. (Remember Hubby’s challenge to me to use up the 18 cake mixes I had before we moved??) Well I have not forgotten the challenge…I have six left after I used an angel food cake mix to make these lemon bars for card club
How’s this for easy.
Ignoring the instructions on the cake mix box. Mix the angel food cake mix and one can of lemon pie filling.
Spread it out onto a greased bar pan.
Bake at 350 degrees for about 20-25 minutes.
Frost when cool. I made some homemade frosting using a 8 oz pack of cream cheese, a stick of margarine, a teaspoon of vanilla and 2 tsp of lemon juice…then added enough powdered sugar until the frosting was the right consistency.
That was easy..now to balance that off, I am going to go wash some baby carrots to bring with too. Something tempting and something healthy.

Thank you for this post. I host cards this month and will make it for my group. Probably lower in calories then other cakes since Angel Food cake is to begin with.
I make this and use it for strawberry shortcake it’s really good the lemon offset the sweet berries really well.
